Alternative Proteins, Including Cultivated Meat, Expected to Lead Food Tech Global corporation ICL Group has identified sustainability and health as key themes in food tech. To achieve these goals, the company forecasts four major trends: personalized diets, a recycling circular economy, expanded use of AI and robotics, and increased preference for alternative proteins.
In particular, the rising demand for vegan and eco-friendly ingredients among consumers suggests that alternative proteins will become a leading trend in food tech.
Alternative proteins encompass not only lab-grown cultivated meat but also plant-based meats and edible insects. These innovations are expected to play a vital role in achieving the United Nations' Sustainable Development Goal of "Zero Hunger," potentially serving as a solution to global poverty issues.

Government Establishes Standards for Plant-Based Alternative Food Quality The Ministry of Agriculture, Food and Rural Affairs announced on the 30th that it has established and issued four types of Korean Industrial Standards (KS) for the first time in the food tech sector, a growing field in the food industry.
To begin with, terms and definitions for plant-based alternative foods, which previously varied across companies and institutions, have been standardized. These foods are defined as those derived from plants, plant-originated or plant-produced materials, including processed products made from them, as well as algae, microalgae, fungi, yeast, and microorganisms.
The standards specify details regarding the classification, grading, testing methods, and inspections for plant-based alternative foods. The Ministry anticipates that these measures will contribute to improving the quality of such products, which have been increasing in demand recently.

Gyeongsangbuk-do Explores Future Food Sources from the Sea Gyeongsangbuk-do Province has announced plans to foster the marine bioindustry, leveraging the abundant marine resources along the East Coast and the region's research capabilities.
A company in Pohang is producing alternative meat products using amino acid complexes extracted from locally sourced seaweed, such as dolmiyeok (rock seaweed) and dashima (kelp).
The marine bioindustry, which integrates advanced technology with marine resources to create food, pharmaceuticals, and cosmetics, has significant growth potential. While over 80% of Earth's biodiversity exists in the oceans, only about 10% of this vast resource is currently utilized.
Globally, the marine bioindustry market is expected to grow from $78.6 billion this year to approximately $130 billion by 2030. In South Korea, the market, valued at 710 billion won in 2022, is projected to grow annually by around 10%.

Korean Dumpling Exports Expected to Hit Record High, Plant-Based Dumplings Gaining Popularity As the global popularity of Korean dumplings continues to rise, this year's export figures are expected to reach an all-time high. With government initiatives paving the way for European markets and manufacturers introducing plant-based dumplings as alternatives to traditional meat-filled versions, export volumes have been steadily increasing.
Notably, the export of plant-based dumplings, made using alternative proteins, has been growing. These products have opened up new markets in countries where meat-filled dumplings could not previously be exported due to religious or quarantine restrictions.
For example, Shinsegae Food has been exporting its "Allban Meat-Free Dumplings," which replace meat with ingredients like tofu, mushrooms, and seafood, to countries including Australia, New Zealand, Singapore, and Indonesia.
