"맛도 모양도 소고기"…韓연구팀, 세계 최초 스테이크 형태 배양육 개발

29일 ㈜오렌지카우(CEO 주선태 교수)에 따르면 세계 최초로 진짜 고기와 유사하고 마블링이 풍부한 스테이크 형태의 하이브리드 배양육 개발에 성공했다.

오렌지카우는 경상국립대 농업생명과학대학 축산과학부 식육과학연구실 창업기업이다.

가축 근육의 줄기세포를 체외에서 배양한 배양 근육조직을 식물성 단백질을 기반으로 제조한 인공모조육에 탑재시킨 것이다.

배양육의 생산비용을 획기적으로 낮출 수 있는 독자적인 세포 배양과 수확 기술을 개발했다.

기존 대량 세포배양을 위해 사용하는 마이크로캐리어는 비가식성 소재로 만들어져 수확 공정이 번잡하고 효율성도 낮았지만 주 교수 연구팀은 식용 소재를 이용한 마이크로캐리어 제조 기술 개발에 성공해 생산비를 절반 이하로 줄였다.

증식한 세포가 분화하는 정도를 근육 유래 세포주별로 조절해 고기 부위별 특유의 맛을 극대화하는 독특한 공정도 확립했다.

"Just Like Real Beef"—Korean Team Develops World's First Cultivated Steak

On May 29, Orange Cow Inc. (CEO Professor Sun-Tae Joo) announced the successful development of the world’s first hybrid cultivated steak featuring rich marbling and a texture closely resembling real beef.

Orange Cow is a startup founded by the Meat Science Laboratory at Gyeongsang National University’s College of Agricultural and Life Sciences.

Cultured muscle tissue, derived from livestock muscle stem cells grown outside the body, has been integrated into a plant-based meat matrix to create a hybrid cultivated steak.

The research team also developed proprietary cell culture and harvesting technologies that dramatically reduce production costs. Traditional microcarriers used in large-scale cell cultivation are made from inedible materials, making the harvesting process complex and inefficient. However, by creating edible microcarriers, the team succeeded in simplifying the process and cutting production costs by more than half.

Additionally, they established a unique method to control the degree of cell differentiation based on specific muscle cell lines, enhancing the distinct flavor characteristics of different cuts of meat.

임기택·조성준 교수, ‘3D 프린팅 하이드로젤 기반 배양육 대량생산 전략’ 제시

강원대학교(총장 정재연) 농업생명과학대학 스마트팜융합바이오시스템공학과 임기택 교수와 식품생명공학과 조성준 교수가 배양육 대량생산을 위한 차세대 핵심 기술인 ‘물리적 자극에 반응하는 3D 프린팅 하이드로젤 기반 배양육 제조 전략’을 제시했다.

해당 기술은 근육과 지방 세포의 정밀한 동시 배양을 가능해, 기존 배양육 기술의 한계를 극복할 수 있는 대안으로 주목받고 있다.

연구팀은 배양육 상용화의 전 과정을 ▲세포 종류 선택 ▲성장 배지 구성 ▲바이오잉크 및 스캐폴드(지지체) 재료 설계 ▲물리 자극(전기·기계·광학)을 통한 세포 성숙 유도 ▲3D 프린팅 기반 조직 구조화 ▲대량생산용 바이오리액터 설계 ▲소비자 수용성 및 규제 대응 등으로 구분하고, 각 단계의 최신 기술 동향과 과제를 심층 분석했다.

또한, 이번 연구는 배양육 상용화의 장애 요인으로 지적되는 기술적 장벽, 고비용 구조, 소비자 수용성, 윤리 및 규제 문제를 포괄적으로 다루는 한편, 다양한 식품용 바이오소재의 기능성·안전성·경제성을 비교 분석함으로써, 향후 연구자, 기업, 정책 입안자들이 실질적인 의사결정과 전략 수립에 활용할 수 있을 것으로 기대된다.

Professors Ki-Taek Lim and Sung-Jun Cho of Kangwon National University have introduced a next-generation strategy for large-scale cultivated meat production, utilizing 3D-printed hydrogels that respond to physical stimuli. This innovative approach allows for the precise co-culturing of muscle and fat cells, addressing key limitations in current cultivated meat technologies and opening the door to more realistic and scalable alternatives.

Their study outlines the entire commercialization process of cultivated meat, analyzing the latest technological developments and challenges in areas ranging from cell selection and media formulation to tissue structuring and bioreactor design. 대상 “친환경 식물성 대체육·배양육 모두 잡는다”

대상은 소재사업 확대를 중장기 비전으로 삼고 미래 신사업으로 대체육 사업 진출에 박차를 가하고 있다. 현재 제품 개발이 활발한 식물성 대체육은 물론, 향후 고성장이 기대되는 배양육까지 적극 투자에 나서고 있다.

대상은 식물성 대체육 제품의 완성도를 높이고, 채널별로 적합한 제품 개발을 위해 2022년 식품연구소에 전문팀을 구성했다. 현재 국내 급식용 메뉴인 ‘식물성 함박스테이크’와 전용 ‘식물성 함박스테이크 소스’를 운영 중이며 앞으로도 다양한 식물성 단백질 소재를 활용한 급식용 제품 라인업을 확대할 계획이다.

대상은 배양육 대량 생산을 위한 배지 제조 설비와 대량 배양 설비를 도입하고, 추후 배양육 제품화를 목표로 하고 있다. 배양육의 단점 중 하나로 꼽히는 높은 원가 문제를 해결하기 위해 전체 생산원가의 약 90%를 차지하는 배양육 배지의 가격을 낮추려 배양육 배지 원료를 식품에 사용 가능한 원료로 대체하는 연구를 우선적으로 수행 중이다.

Daesang Targets Both Plant-Based and Cultivated Meat Markets

As part of its long-term vision to expand its materials business, Daesang is accelerating its entry into the alternative protein space, actively investing in both plant-based and cultivated meat sectors.

In 2022, the company established a dedicated team within its food research institute to enhance the quality of plant-based products and tailor development for various distribution channels. Daesang currently offers plant-based hamburger steaks and accompanying sauces for foodservice and plans to expand its lineup using diverse plant protein ingredients.

Daesang is also preparing for large-scale production of cultivated meat, installing culture media manufacturing systems and mass cultivation facilities. To address one of the major challenges in cultivated meat—its high production cost—the company is prioritizing research into replacing culture media components (which account for about 90% of total production cost) with food-grade alternatives.

According to annual industry data, production of zero-sugar products increased by 20.1%, plant-based items surged fivefold, and high-protein foods rose by 24.0% compared to the previous year. These shifts signal a change in how consumers manage their health—moving away from restrictive dieting toward a more holistic approach that embraces both wellness and the pleasure of eating.
