The EIT Food Consumer Observatory, part of the European Unionโs food innovation initiative, released two reports offering insights into how the industry can increase consumer acceptance of alternative proteins.
According to the reports, consumers tend to perceive traditional meat as natural and familiar, while cultivated and plant-based alternatives are often viewed as artificial and unfamiliar. Therefore, for alternative proteins to gain a foothold in the European market, companies must go beyond technological innovation and consider cultural identity and values related to food.

Weeks After FDA Approval, Wildtype Expands Cultivated Salmon Across US Restaurants
The companyโs cell-cultured coho salmon, which received approval from the Food and Drug Administration (FDA) in late May, is now available in four restaurants, with another soon to be announced.
The spate of rollouts follows the FDAโs issuance of a โno questionsโ letter to Wildtype, which confirmed that the cultivated salmon is โas safe as comparable foods produced by other methodsโ. Founders Aryรฉ Elfenbein and Justin Kolbeck told Green Queen that the startup plans to debut retail too, following the foodservice launches. It isnโt the only cultivated protein to land restaurant deals in the US this year.
Mission Barns, which received the FDA green light in March and US Department of Agriculture approval last month (Wildtypeโs salmon does not fall under the latterโs oversight), will soon serve its cultivated pork at Fiorella Sunset in San Francisco this quarter. In addition, its meatballs will be available at Sprouts Farmers Market. |

Scientists Develop Bioengineered Tooth Using Pig and Human Cells
Researchers at Tufts University have successfully developed a bioengineered tooth resembling a natural one by combining pig and human cells, according to ITmedia on August 6 (local time).
The team first removed the cells from a pig tooth, leaving behind its natural scaffold. They then combined this structure with human dental cells, pig dental cells, and vascular cells to create a tooth-like embryo. After culturing the embryo in a bioreactor for one week, it was implanted into the jaw of a 2-month-old miniature pig. Results showed that after two months, 62.5% of the implants formed tooth-like structures, and after four months, the success rate was 50%.
The resulting structures included dentin, cementum, and dental pulpโkey components of natural teethโand even tissue resembling the periodontal ligament was observed.
The researchers noted that this technology has the potential to replace dental implants and dentures in the future, but emphasized that further clinical studies are needed before it can be applied to humans. |
